Adapted from here  I doubled the Recipe: 1/2 cup sourdough starter, freshly fed 1/2 cup whole wheat flour 1 cup old-fashioned oatmeal 1 teaspoon pumpkin pie spice 1/2 teaspoon salt 1/2 teaspoon baking soda 1 tablespoon brown sugar 1 cup canned naked pumpkin 1 tablespoon coconut oil, melted 1/3 cup unsweetened soy milk, plus a little water if batter is too thick 1/4 cup slivered almonds AND THEN ALSO DO THIS: 1/2 cup semi sweet chocolate chips (do it! worth it!) Directions: 1 Place the oats in a blender container (or coffee grinder) and process to turn oats into flour. 2 In a large bowl combine the processed oats, flour, spice blend, salt, baking soda and brown sugar. 3 Add pumpkin, and coconut oil to dry mixture. Stirring to combine; add the sourdough starter, soy milk, and water as needed to reach proper consistency for a thick waffle batter; stir in nuts and CHOCOLATE!! 4 Bake on preheated waffle iron as per manufacturers suggestion 5. top with bananas, berries, peanut butter, cookie butter, honey, PUMPKIN GRANOLA (trader joes), syrup, apple sauce... you name it. Freeze them for a quick breakfast later on (microwave or toaster). do yourself a favor... make these... and poop well! ;)
